Recipe for Brandy Butter at Christmas
Brandy butter can be bought ready-made but using this recipe to make your own brandy butter will be more rewarding. Brandy butter is very versatile at Christmas and can be used with all puddings and mince pies. Make your brandy butter two weeks in advance.
Ingredients for recipe
1/3 cup cognac/brandy
250 g /8ozs soft unsalted butter
250 g/ 8oz light muscovado sugar
75 g/ 2 and one 1/2 ozs ground almonds
2 tspoons finely grated orange zest
1 pinch ground mixed spice
Method for making this recipe
In a large mixing bowl blend the butter and sugar together with an electric whisk until soft and creamy. Gradually add the sugar, almonds, mixed spice and orange zest, leaving the brandy till last, and mix until a smooth paste is formed. Store your brandy butter a plastic container and remove from fridge 2 hrs before needed.
