Low Fat Christmas cake recipe
• 120g/4ozs low fat margarine
• 2 Tsp/5ml sunflower oil
• 120g/4ozs black treacle
• 150g/5.3ozs Self-Raising Flour
• 2 Tbs Mixed Spice
• 120g/4ozs Sultanas
• 120g/4 ozs Raisins
• 120g/4ozs Currants
• 120g/4ozs Cherries
• 3 medium sized free range eggs
• 2 Tbsp/30ml Sherry
• 1 Tbs raw lemon peel
• Salt to taste
Other items needed to hand for this low fat Christmas cake recipe
7” cake tin, tin foil, large mixing bowl, wooden spoon, whisk, airtight container
Method for baking low fat Christmas cake recipe
1. Grease Christmas cake tin with the sunflower oil and line with tin foil
2. Preheat the oven to Gas mark 2/150°C
3. Beat the treacle and margarine together then slowly add eggs, salt and mixed spice.
4. Sift the flour and add to above
5. Add the dried fruits, cherries, sherry and zest and juice of lemon.
6. Put the mixture into the prepared tin and level off
7. Bake in the oven for approx 2/2.5 hours.
8. Place a piece of tin foil over the top of the cake if it becomes too brown.
9. Allow the Christmas cake to cool for 30 minutes.
10. Wrap in tinfoil and store in airtight container.
