Christmas Dessert Recipes
Christmas Dinner tends to dominate as the focal point of Christmas food. However, for those with a sweet tooth, Christmas desserts are just as appealing. Christmas desserts can sometimes be overlooked as many people feel they will not have “room” for dessert after Christmas dinner. However, for those of us for whom desserts rank high on our Christmas delights list, the following Christmas dessert recipes will surely please & be welcome!
Ingredients for Christmas Pavlova Dessert:
4 large egg whites
200 grms caster sugar
1/2 teaspoon vanilla extract
1 teaspoon white vinegar
1/2 tablespoon cornflour
240 ml whipping cream
20 grams granulated white sugar
Mixture of strawberries, raspberries, blackberries, peaches, pineapple, or any fruit of your choice
Method of baking Christmas Pavlova Dessert:
Preheat oven to 250 degrees F, 130 degrees C, Gas Mar 6/7. Line a baking sheet with greaseproof and leave to one side.
Beat egg whites until they hold soft peaks. Add the sugar a little at a time continuing to beat, until mixture morphs into stiff shiny peaks. Beat in the vanilla extract. Gently fold in vinegar and cornstarch. Spread onto the greaseproof paper in a circle about 7” in diameter, higher around edges and dipping in the centre for the topping and fruit.
Bake for 60 to70 minutes until the outside is dry and pale cream color. Let the meringue cool completely in the oven. It can be stored in an airtight container for a few days if required.
When ready to serve, whip the cream and place into the center of the meringue. Arrange the berries on top of the cream in your own creative style and serve.
Method of making Christmas Cheesecake Dessert
• Melt butter in a saucepan and add crumbs until butter is absorbed.
• Remove from heat and, using the back of spoon, press mixture into the bottom of a lined flan tin. Leave to set for one hour in the fridge.
• Grate chocolate
• Whip cream until it forms soft peaks.
• Separately, beat cream cheese until soft.
• Add icing sugar and liqueur of choice.
• Fold in whipped cream and three-quarters of the chocolate and spread evenly onto biscuit base.
• Refrigerate and allow to set for at least two hours- the longer, the better.
• To serve, remove from tin and sprinkle with remaining grated chocolate.
