Ingredients for Christmas Eggnog
cups full fat milk
• 6 large eggs
• 4 cups full fat milk
• 2 separate egg yolks
• 3/4 cup double cream
• 1/2 cup muscovado sugar
• 2 tbls of demerara sugar
• 1 tbls vanilla extract
• 1/2 tsp nutmeg
• 1 cup brandy/whiskey/liqueur (Christmas special)
Method of making Christmas Eggnog
Beat the eggs, egg yolks and sugar in a saucepan. Stir while you pour in the milk. Cook eggnog on cooker’s lowest setting for about 30 mins. Strain to remove any pieces of cooked egg from the eggnog mixture. Stir in the alcohol, vanilla, and nutmeg, and transfer to a large jug or bowl. Store in the fridge for 3 to 4 hours. Whip cream and add to the mixture before serving a wonderful Christmas drink.
You can also make a low fat version of Christmas eggnog by substituting low fat milk and cream.
