Low Calorie Christmas Nut Roast
Ingredients for Christmas nut roast –low calorie Christmas dinner alternative
• Coconut or olive oil for frying
• 1 chopped onion,
• 2 cloves minced garlic
• 8 sliced medium mushrooms
• 1 tbsp. cornflour
• 110 fl oz or water
• 9 oz finely chopped mixed nuts
• 6 oz breadcrumbs
• 1 tbsp. soy sauce
• ½ tsp. dried mixed herbs
• Salt and pepper to taste
• Flour for coating
• Margarine for greasing loaf tin

Method for Baking Christmas nut roast –low calorie Christmas dinner alternative
Pre-heat oven to 190C/375F,
Fry garlic, mushrooms and onions until soft. Stir in cornflour. Add water, stirring until mixture comes to the boil. Stir in breadcrumbs, nuts, herbs, soy sauce, and seasoning.
Turn mixture on to a floured board, and form a loaf shape. Place in greased loaf tin in centre of oven for approx 40 mins. Ovens vary so pierce centre with skewer or knife to test if fully cooked. Allow to cool for 10 mins before serving.
