Christmas Yule Log Recipe
A Yule log at Christmas is a great alternative to Christmas fruit cake. The Yule Log is a celebration of Christmas and the winter solstice as it is a symbol of burning a Yule log in the hearth as part of the Christmas celebrations in several European cultures. "Yule log” refers to a log-shaped Christmas cake.
This Yule log recipe will delight your family and guests at Christmas. The Yule log has three stages – Yule log Sponge, Yule log Filling and Yule log Icing/Sauce.
Yule log Sponge Ingredients
4 Large eggs
4ozs Caster Sugar
4ozs Self-Raising Flour
½ oz Cocoa Powder
Yule Log Filling Ingredients
2ozs Brown Sugar – try muscovado
2ozs Chopped Mixed Nuts
12fl ozs Double Cream
6 drops vanilla essence
Yule Log Icing/Sauce Ingredients
300grms Milk Chocolate
20fl ozs Double Cream
Method for baking Christmas Yule Log
It is a good idea to make the Yule log icing/sauce first as it needs to be refrigerated overnight.
Yule Log Icing/Sauce - Cut the chocolate into small pieces and place in a bowl. Bring the cream to the boil in a saucepan, and pour over the chocolate pieces stirring until completely melted. Allow to cool completely, cover and put in fridge overnight.
Yule Log Sponge - Put the eggs and caster sugar into a mixing bowl and whip until and thick and the mixture holds to a figure 8. Sieve the flour and cocoa together and fold into the egg mixture. Line a Swiss Roll tin with floured baking parchment. Pour the mixture into the tin and bake at 180oC for 10 minutes.
Remove from oven, place a sheet of baking parchment on top of the tin and flip the tin over to remove the Swiss Roll, and place parchment and sponge on a wire rack to cool.
Yule Log Filling - In a small heavy bottomed pan, cook chopped nuts and brown sugar on low heat till sugar has melted. Allow to completely cool.
Pour the cream and vanilla essence into a large bowl, and whip until thick. Stir in cooled sugar nut mixture.
Put the Filling onto the sponge and roll gently. The sponge may crack but don’t’ worry - dust with caster sugar to give the yule log a snowy effect. When ready to serve, retrieve the Yule log icing/sauce from fridge. Whip until thick and either pipe over the Yule log or serve separately in a jug/bowl to cater for individual tastes.
